Malai Kofta

Name of the dish and origin:

Malai Kofta - Malai Kofta is a North Indian dish that literally translates into "Cheese Balls". They are balls (or small loafs) of Indian Paneer mixed with potatoes and other spices in a curry.


What inspired you to make the dish:

It seemed like quite an extravagant dish and I wanted to test my skill on something that wasn't just a one pot dish. It's a dish loved by many of my vegetarian friends as well. 


What did you like about the food:

The contrasting flavors and textures really makes this dish. The curry is spicy and savory while the kofta cheese balls are sweeter and more subtle in flavor. The koftas themselves have a crispy exterior and a soft and creamy interior. 


What would you have done differently or how did you modify the recipe:

I think I did well with this dish overall. I might choose to add different spices inside the koftas next time.
