Name of the dish and origin:
Baingan Bharta & Chapati - Baingan Bharta is a famous Punjabi (North Indian) eggplant dish to go along with Chapati. Chapatis are a very common north Indian unleavened flatbread made with whole wheat flour and is usually eaten with Indian curries. What inspired you to make the dish:
I very much enjoy cooking in general and Indian foods are both fun to make and eat. I work with many Indians as my fellow colleges so there is a sense of pride in making something that they can also relate to. It's also a rather simple dish to make and is vegetarian which makes it easily palatable for anyone. It's also quite similar to a Persian dish that also utilizes mashed eggplants and flat bread.
What did you like about the food:
The food was obviously very tasty and spicy. I think I made the eggplant dish to the best of my ability. What would you have done differently or how did you modify the recipe:
The Chapati’s are something I need to work on. It's something even Indian cooks spend years to perfect so there is no sense claiming I could get it perfect the first time I tried. Overall, even the Chapati bread turned out good.
